One Pot Taco Tortellini

Components

  • 16 oz. tortellini
  • 1 can black beans
  • 1 can corn
  • 1 medium tomato, diced (or 1 can diced tomatoes)
  • 1 packet taco seasoning of selection
  • 1/2 cup cheddar cheese
  • 1/4 cup Greek yogurt (or bitter cream)
  • 1/4 cup marinara sauce
  • tortilla chips, for dipping/topping

Directions

  • Rinse black beans and mix beans, corn, tomatoes and taco seasoning in a bowl.
  • Carry salted water to a boil in a medium pot. Cook dinner tortellini for roughly 8 mins, or in step with directions.
  • As soon as tortellini is cooked, drain pasta water and upload black bean corn aggregate to the pot with tortellini.
  • Upload in shredded cheese and blend. Combine in Greek yogurt or bitter cream and marinara sauce and stir.
  • Serve heat, and most sensible with tortilla chips and avocado.
  • Revel in!
