Lemon-Poppy Seed-Ricotta Cookies – Bake from Scratch

Lemon-Poppy Seed-Ricotta Cookies

Makes about 30 cookies

  • ½ cup (113 grams) unsalted butter, softened

  • Within the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar at medium pace till fluffy, 3 to 4 mins, preventing to scrape aspects of bowl.
